My favorite recipe for Christmas morning breakfast

12 Eggs - beat with mixer

Add and beat with mixer

1/2 cup flour

1/2 teaspoon baking powder

Fold into the above with a spoon or spatula

1 cup small curd cottage cheese

1 cup chopped feta

1 cup shredded jack

1/2 cup melted butter

1 tablespoon chopped chives or greens of green onion

1/2 teaspoon dry mustard

1/2 teaspoon fresh ground pepper

1 can diced green chilis (4 ounces)

1 pound red new potatoes, peeled and boiled until barely cooked

Pour into battered 9 x 13 inch baking dish

Bake at 350 degrees for 35 minutes

A few  time-saving tips: 

Prepare potatoes a few days before. Dice cooked potatoes and place them in the refrigerator.

On Christmas eve prepare the whole dish and place in refrigerator. Take out of refrigerator and let stand for about a half hour before placing in oven. 

Or prepare the whole thing in the morning.
